Mara Lindqvist opened Spruce Blend Gates in March 2019 in a former hardware shop in Shindencho. The spruce tree in the back garden was already there. It had been growing through a gap in the fence for at least twenty years, and Mara decided to keep it rather than cut it down. The name came from that tree, the blending of different origins she was already obsessed with, and the gates of the old shop front that she repainted dark green and kept as the entrance. The first week, she served coffee from a second-hand La Marzocco Linea she'd bought from a closing cafe in Bristol.

The first year was a lesson in what a neighbourhood actually needs. Mara had planned a minimal menu. Just coffee and a few pastries from a local bakery. By month three, regulars were asking for proper food, somewhere to work, and a space that stayed open past four. She extended the kitchen, hired two cooks, and pushed closing time to six. The banana bread recipe came from her grandmother's notebook, scaled up and tested over about thirty batches before it tasted right. That was autumn 2019, and it's been on the menu every day since.

Mara Lindqvist trained as a barista in Edinburgh in 2013, working at a small specialty roastery on Leith Walk for four years before moving south. She spent two years as head of coffee at a small group of three cafes in Bristol, where she learned how to source beans directly and how to run a kitchen without losing her mind. She opened Spruce Blend Gates in March 2019 in a former hardware shop she'd been watching for two years. Outside the cafe, she grows her own herbs in the back garden, keeps a notebook of filter recipes, and takes one week every winter to visit a coffee-producing region. She went to Ethiopia in January 2024 and came back with three new supplier contacts and a very strong opinion about natural-process Sidama.
